Super Moist Paleo Banana Bread

Paleo Banana Bread

This is a Paleo recipe but NOT Low-Carb or Keto. I will post my Low-Carb/Keto Banana Bread separately.

Ingredients

  • 1 cup almond flour
  • ½ cup coconut flour
  • ¼ cup flaxseed meal
  • ¼ cup of chopped walnuts optional
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 4 eggs
  • ½ cup coconut oil or grass fed ghee clarified butter, melted + a little extra for greasing pans
  • ½ cup maple syrup you can add a little extra for more sweetness
  • 1 teaspoon vanilla extract
  • 2 large ripe bananas mashed

Instructions

  • Preheat oven to 350 degrees. Grease 2 small loaf pans (5¾ x 3½) or 1 8 x 8 pan with coconut oil or butter
  • Combine wet ingredients in a small bowl and whisk together.
  • Pour wet into dry ingredients and mix until fully incorporated.
  • Divide evenly (dough should be thick) into loaf pans or the single 8 x 8 pan and smooth the top/s
  • Bake loaf pans for 35 minutes or 8 x 8 pan for 45 minutes
  • Remove loaves from oven, let cool in pan/s for 5 minutes and then transfer to airtight storage to maintain moist texture
